1 Head Cauliflower
3-1/2 Tbsp olive oil
2 Tbsp Curry powder
1/2 Tbsp salt
Preheat oven to 350 degrees. Wash cauliflower and trim green leaves. Use a knife to cut around the base and remove the center core but leave the florets of the cauliflower intact. Place the cauliflower in the center of a baking dish line with parchment paper. In a small bowl, whisk the oil, curry powder and salt until blended. Brush the mixture onto the cauliflower evenly until it is generously coated. Roast about 1 hour until golden brown and fork tender. Cut into wedges and serve.
