Start your day off right with this easy to make, heart-healthy breakfast grain which stars apple, banana and dried fruit to add natural sweetness. (Note: we made this recipe with Trader Joe’s Oven Toasted Old Fashioned Organic Oats with a cooking time of 5-7 minutes; and also with their Gluten Free Rolled Oats version with a cooking time of 15-20 minutes.)
Ingredients
1 cup oats
1 apple
1 banana
1/4 cup dried raisins and/or cranberries
4 cups water
1/4 Tsp salt
1/2 Tsp ground cinnamon
1/4 Tsp ground nutmeg
Optional Toppings:
1/4 cup shredded, unsweetened coconut
1/4 cup chopped walnuts or pecans
Dollop of plain yogurt
Milk, almond or soy milk
Preparation
Cut apple into quarters and remove core, peel banana and chop both into 1″ pieces. In a large saucepan add water and salt and bring to a boil. Add oats and all ingredients, return to a boil. Reduce heat to maintain a simmer and cook on low for 10-12 minutes, stirring occasionally. Serve in bowls with optional toppings.
